Homemade Vanilla Wafer Recipe

Making vanilla wafers is sooooo easy with this vanilla wafer recipe. You might never go back to store bought again.

Most often vanilla wafers are referred to as Nilla which is the brand owned by Nabisco. They are often used in trifles or for making crusts as well as in certain puddings - such as banana pudding. They are so easy to make at home. Vanilla wafers are just a derivative of shortbread cookies.

For this vanilla wafer recipe - obviously - they are flavored with vanilla. However, you certainly can flavor them with almond extract or lemon extract.

Vanilla Wafer Recipe

Homemade Vanilla Wafers: Ingredients

  • 1/2 cup butter - softened
  • 3/4 cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

  • Vanilla Wafer Recipe: Method

With a hand held mixer - or a stand mixer - cream the butter and the sugar. Add the egg and blend until your mixture is light in texture and color.

Add all the remaining ingredients and mix until well combined.

Form into balls about 1 inch in diameter and place each ball on a greased cookie sheet about 2 to 3 inches apart - they will spread.

Bake at 350 degrees for 12 to 15 minutes. Your vanilla wafers will be soft out of the oven but they will harden as they cool. Wait 5 minutes before moving them to a cooling rack.

Makes about 3 dozen or so...depending on the size of your cookies.
