Chicken is such a versatile meat. It can easily be made into soups, appetizers, salads, entrees...anything except desserts it seems. Chicken also spans many different ethnicities and nationalities: French food, Mexican, Italian, Chinese...

You know I don't pretend to be a chef or even a great cook. There are some fantastic cooks out there and if you are one of those awesome cook and the owner of a few delicious quick easy chicken recipes yourself, please do not hesitate to share them! That would be such a treat!

When I was a child, roasted chicken with braised potatoes was our Sunday lunch. Yep...Sunday after Sunday! I got so sick and tired of this dish! Yet when I left home for college and then returned home after being gone 9 1/2 months, the first meal I asked for on a Sunday was...yes, you guessed it roasted chicken and braised potatoes!

I am glad to say I too can make this recipe but I am even happier to say I have learned many other ways to fix chicken!
