Quesadilla - pronounced Kay-suh-dee-yah - in its most basic form is a Mexican dish made of cheese inside a folded flour - or corn - tortilla and cooked until the cheese melts. Does not get any simpler than that. It is usually served with guacamole, sour cream and/or salsa. These shrimp quesadillas are a bit more sophisticated. Try 'em! Method for Shrimp QuesadillasIn a large size bowl, place your shrimp, the olive oil and your spices. Let sit for 20 minutes to one hour. Grill the shrimp in the oven - or on the BBQ - or cook them on the stove in a hot pan. When they turn opaque and are firm to the touch, they are ready. Remove them from the oven. Place one tortilla in a large frying pan - or a griddle. Place one quarter of the cheese and the shrimp on one half of the tortilla. You may also add some cilantro and green chilies at this time. Fold the other half of the tortilla. When your tortilla start to turn a golden brown and the cheese starts to melts, flip it over and cook on the other side.
