Simple Shrimp Quesadilla Recipe





This is a simple shrimp quesadilla recipe...but don't let that fool you...simplicity does not mean lack of flavor!

This recipe for shrimp quesadillas takes the simplest Mexican dish - quesadillas - and makes them a delicious and easy meal.

What are quesadillas?

Quesadilla - pronounced Kay-suh-dee-yah - in its most basic form is a Mexican dish made of cheese inside a folded flour - or corn - tortilla and cooked until the cheese melts. Does not get any simpler than that. It is usually served with guacamole, sour cream and/or salsa.

These shrimp quesadillas are a bit more sophisticated. Try 'em! Then please come back and leave your review.

Ingredients for Shrimp Quesadillas


  • 1 pound shrimp - peeled and deveined

  • 4 large flour tortillas

  • 2 cups cheese - Cheddar, Colby, jalapeno or Monterey Jack

  • Some olive oil

  • A can green chilies - optional

  • Some spices: A seafood blend, or plain salt and pepper, or other spices of your choice

  • 1/4 cup finely chopped cilantro

  • Optional toppings: Salsa, guacamole, lime juice and sour cream






Method for Shrimp Quesadillas

In a large size bowl, place your shrimp, the olive oil and your spices. Let sit for 20 minutes to one hour.

Grill the shrimp in the oven - or on the BBQ - or cook them on the stove in a hot pan. When they turn opaque and are firm to the touch, they are ready. Remove them from the oven.

Place one tortilla in a large frying pan - or a griddle. Place one quarter of the cheese and the shrimp on one half of the tortilla. You may also add some cilantro and green chilies at this time. Fold the other half of the tortilla.

When your tortilla start to turn a golden brown and the cheese starts to melts, flip it over and cook on the other side. Repeat this process until you have used all your tortillas.

Serve with the topping(s) of your choice.
