Note: If you choose to use raisins, soak them overnight for an even better flavor and plumper raisins Recipe for Rice Pudding; IngredientsPlace the rice and the water in a pot. Place a lid on top and put the pot on the stove on medium heat. Set your timer for 20 minutes. When the rice is cooked and the water is absorbed add 3 cups of milk to the pot. Once again cover and set your timer for 20 minutes. In a large bowl, beat the two eggs with the remaining cup of milk. Set aside. When the milk is absorbed, add the sugar and the milk/egg mixture to the rice. Mix thoroughly and continually for 2 to 3 minutes. Note: If you are putting raisins in your rice pudding, add them at this time as well - along with the cinnamon. Take the pot of the stove. Add the butter and the vanilla extract. Serve warm or cold.
