Lemon Poppy Seed Pancakes





The recipe for these lemon poppy seed pancakes came to me one night when there were no plans for dinner and pancakes were requested.

"Sure!" I said.

I was planning on making our usual delicious buttermilk pancake recipe served with our homemade pancake syrup recipe when an idea popped into my head:

"Hey guys...what about poppy seed pancakes!"

I'd like to say that my family responded with shouts of joy and glee at the announcement of these homemade pancakes....but... that'd be a lie.

They actually looked at me as if I had two heads.

"You mean lemon poppy seed br-ead?"

"Nope...I mean Lemon poppy seed PAN-CA-KES!"

They did not say "yuck" but I can tell they wanted to. No problem...I'd make our buttermilk pancake recipe for them AND lemon poppy seed pancakes from scratch just for me.

Only one child dared to taste them...but he LOVED them! Ha, that'll be our secret!

Did not last long....I made them the next morning for breakfast and that time there were many takers and served with blueberry syrup, it was a HUGE hit! Once again...mom was right! I love it when my kids have to admit I am a lot smarter then they think - especially my teens!

Poppy seed pancakes





Ingredients For These Pancakes From Scratch

  • 1 cup of all purpose flour

  • 1 egg

  • 2 tsp. of baking powder

  • 1/2 tsp. of baking soda

  • 3/4 cup of sour cream

Variation: 1/2 cup of plain yogurt. The batter with the yogurt will make less pancakes.

  • 1/4 cup of lemon juice

  • 1/2 cup of milk

  • 2 TB. of melted butter






Lemon Poppy Seed Pancakes

Place all the ingredients together in a stand mixer bowl and mix well.

If you do not have a stand mixer, you can use a hand held mixer, a whisk or a fork.

The batter will be very thick and you can add a little milk - 1 tablespoon at a time - until the batter is more to your taste.

Place some batter on a greased hot griddle or pan. The pancakes will not form any bubbles as they cook but the edges will become dry and the top will look like it has a "film" on top. Flip them and cook until both sides are a nice golden brown and they are cooked through.

Serve with butter and the topping of your choice.

Makes 10 to 12 pancakes.
