This is a delicious, flavorful, moist and simple recipe for oatmeal cake and frosting.

One evening while the family was out, I decided to make something sweet as an addition to dinner - chicken and dumplings....but we live over 20 miles from the nearest town. We do not go in unless we have to...gas is pricey. So I decided to make an oatmeal cake as we ALWAYS have oats.

This cake was a hit and the smell is divine. To top it off, oatmeal is good for you...maybe it'll counterbalance the sugar and butter...then again maybe not.

Oatmeal Cake and Frosting





Ingredients for this Oatmeal Cake Recipe

  • 1 1/3 cups oats - the quick kind

  • 1 1/2 cups HOT water

  • 1 1/2 sticks butter - or 3/4 cup

  • 1 1/4 cups light brown sugar

  • 1 1/4 cups white sugar

  • 2 eggs

  • 1 3/4 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves






Method for this Oatmeal Cake

In a middle size bowl, place the oats and the hot water. Blend and let it sit. Set aside.

In a stand mixer bowl - or a large bowl and a hand mixer - place the butter, the brown sugar and the white sugar and blend until creamy. Add the eggs, one at a time and cream some more until the mixture is light in color and texture. This will take a few minutes.

In a large bowl, place the flour, the salt, and the spices. Blend with a whisk.

To the bowl with the butter-sugar-egg mixture, add the flour mixture and blend well. Add the oatmeal and combine some more.

Pour into a 9x13 greased pan and bake 40 to 45 minutes at 350 degrees - or until a knife inserted in the center comes back out clean.

Make the frosting - recipe below - and pour over the cake while it is still hot.






Variation for Apple Oatmeal Cake

If you want to make an apple oatmeal cake, add 1 cup of cut up apples to your batter. Bake as usual.






Oatmeal Cake Frosting

  • 1 stick butter - or 1/2 cup

  • 1 cup light brown sugar

  • 1/4 cup evaporated milk or half and half

  • 1 teaspoon rum extract




In a medium saucepan place all the ingredients except for the rum extract.

Place on a medium high cooktop and bring to a boil - do not forget to stir or it will burn! Let it boil for 1 to 2 minutes. Add the rum extract.

Pour over your oatmeal cake.
