Mint Filled Chocolate Cookies

These are amazingly delicious cookies that have been requested numerous times!!

Chocolate cookies:
1 1/2 cups packed brown sugar 3/4 cup butter, cubed 2 T. water 2 cups semisweet chocolate chips 2 eggs 3 cups flour 1 1/4 t. baking soda 1 t. salt
Mint Filling:
1/3 cup butter 3 cups powdered sugar 3 to 4 T. milk 1/4 t. peppermint extract - more or less, depending on preference.
In a small saucepan, combine the brown sugar, butter and water. Cook and stir over medium heat until sugaris dissolved. Remove from heat; stir in the chocolate chips until melted and smooth. Transfer to a large mixing bowl and cool slightly.
Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt. Gradually add flour mixture to chocolate mixture. Drop by rounded spoonfuls onto greased baking sheets. Bake at 350 degrees for 8-10 minutes or until set. Move to wire racks and flatten slightly. Cool completely.
Combine the filling ingredients and spread on half of the cookies. Top with the remaining cookies. Store in the refrigerator and they will soften.
Makes about 4 dozens.
