Key Lime Cheesecake RecipeThis is a wonderful, easy, delicious and refreshing key lime cheesecake recipe. You can make this key lime cheesecake with key limes or regular limes. I make mine with regular limes since this is what I had. It turned out beautifully. I did have some complaints since some members of my family prefer the raspberry chocolate cheesecake. Great! Key Lime Cheesecake: MethodMethod to make the crust: Crush the graham crackers into crumbs. In a

use a
"zester" ![]() In a saucepan, whisk the sugar and egg yolks together. Add the juice and zest and mix again until well blended. Place the saucepan on the stove on medium heat. Stir constantly of the bottom of your custard will stick! When the custard boils and thickens up remove from the heat. Let cool at room temperature, stirring occasionally. Place this layer on top of the crust. Method to make the filling: Blend together the cream cheese, sugar, eggs lime juice and zest. I use a stand mixer for this process. Once this mixture is well blended, pour over the top of the custard. Place in an oven heating at 350 degrees and bake for 35 to 45 minutes. The sides of the top should look lighty golden and the center should still be a tad giggly when you gently touch the pan. Method to make the topping: Mix the sour cream and the sugar. Place on top of the warm cheesecake and put back in the oven for an additional 10 minutes. Cool the key lime cheesecake completly before placing in the oven until set. Usually over night but as little as 4 hours will do. Also keep in mind that this key lime cheesecake recipe can be made up to 2 days in advance. To Garnish use some lime slices.
