Ingredient Substitutes

  • Sweetened Condensed Milk

  • Baking Powder
  • Eggs
  • Fruit Juice versus Sugar
  • Buttermilk
  • Self Rising Flour
  • Cake Flour

Ingredient Substitution: Sweetened Condensed Milk

  • 1 cup powdered milk

  • 1/3 cup boiling water

  • 2/3 cup sugar

  • 3 tablespoons butter

Mix all the ingredients in a blender until smooth.

Ingredient Substitution: Baking Powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon cream tartar

This equals to one teaspoon of prepared baking powder.

Ingredient Substitute: Egg Substitutes

These all equal one egg:

  • 2 tablespoons cornstarch - arrowroot and potato starch would work as well

  • 1 heaping tablespoon soy flour plus 2 tablespoons of water

  • 1 tablespoon flax seed meal plus 3 tablespoons of water

  • 1/4 cup applesauce

Substitute Apple Concentrate for Sugar

1 cup of sugar equals to 3/4 cup apple juice concentrate minus 3 tablespoons of the liquid in your original recipe.

Note: you may use pear or grape concentrate as well.

Ingredient Substitution: Buttermilk

1 tablespoon of vinegar plus enough milk to make one cup. Let sit 5 to 10 minutes before using.

Self Rising Flour

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/8 teaspoon salt

Mix until well combined. This equals 1 cup of self rising flour.

Cake Flour

  • 2 tablespoons cornstarch

  • Enough flour to make a cup

Place 2 tablespoons of cornstarch into a 1 cup measuring cup and put enough flour to top off the measuring cup. This is equal to one cup of cake flour.

Also 1/4 cup of cornstarch to 1 3/4 cups of flour = 2 cups of cake flour.
