Bah...we have not bought pre-made pasta since. We have however made raviolis, lasagna... This is such an easy pasta recipe and it is so good! I am telling the truth this simple pasta recipe is addictive! It was given to me by an Italian lady so I assume this is an authentic pasta dough recipe.

Homemade Pasta Dough Recipe: DirectionsI make my dough with my forever faithful stand mixer. I just love the thing...breads, cakes, anything...I plop it in there and it makes my life a lot easier. Place all the ingredients in a bowl - if you are using a mixer turn it on (I use the dough hook) - if not place mix the dough with a wooden spoon until you can no longer do so. Then, coat your hands with flour and start kneading it by hand. ![]() Knead until you have a soft round dough. It still will be a tad on the sticky side not all soft and bouncy like a bread dough. Your pasta dough should be firm, smooth and elastic. By hand this process can take about 20 minutes. Cover the bowl with a clean damp cloth and wait 30 minutes before using it. Next, I use a pasta machine like the one below. ![]() Divide the dough into two to three portions. If you do not have a machine you will need to roll the dough and then cut it into strips with a knife. That is a lot of work! Otherwise, follow the directions on the pasta maker. One side will roll the pasta dough, the other side will cut it.
If you have a pasta rack, place your pasta strands on there to dry. If not, use a floured kitchen towel and place your pasta on that in order for them to dry fro about 30 minutes. ![]() When you are done, put some water into a pot. Put some salt and olive oil in the water and bring to a boil. When the water is boiling, put your pasta in and cook for 2 to 3 minutes if you made fettuccine.
