I made this simple pasta recipe one time "just for fun" and to "try it out." Bah...we have not bought pre-made pasta since. We have however made raviolis, lasagna...

This is such an easy pasta recipe and it is so good! I am telling the truth this simple pasta recipe is addictive!

It was given to me by an Italian lady so I assume this is an authentic pasta dough recipe.

I have said many times before I am not a professional cook nor do I consider myself an expert. You may know so much more about cooking and a pasta dough recipe than I do.

Homemade Pasta Dough Recipe: Ingredients

Makes 1 pound of pasta

  • 2 cups of unbleached all-purpose flour

  • 4 large eggs - beaten

  • 1 tsp. of salt

  • 1 TB. of olive oil

  • Some additional flour

I make my dough with my forever faithful stand mixer. I just love the thing...breads, cakes, anything...I plop it in there and it makes my life a lot easier.

Place all the ingredients in a bowl - if you are using a mixer turn it on (I use the dough hook) - if not place mix the dough with a wooden spoon until you can no longer do so. Then, coat your hands with flour and start kneading it by hand.

Knead until you have a soft round dough. It still will be a tad on the sticky side not all soft and bouncy like a bread dough.

Your pasta dough should be firm, smooth and elastic. By hand this process can take about 20 minutes.

Cover the bowl with a clean damp cloth and wait 30 minutes before using it.

Next, I use a pasta machine like the one below.

Divide the dough into two to three portions. If you do not have a machine you will need to roll the dough and then cut it into strips with a knife. That is a lot of work!

Otherwise, follow the directions on the pasta maker. One side will roll the pasta dough, the other side will cut it.

Note: I have never had much success making the spaghetti so I just stick with the fettuccine.

If you have a pasta rack, place your pasta strands on there to dry. If not, use a floured kitchen towel and place your pasta on that in order for them to dry fro about 30 minutes.

When you are done, put some water into a pot. Put some salt and olive oil in the water and bring to a boil.

When the water is boiling, put your pasta in and cook for 2 to 3 minutes if you made fettuccine. Stir only once, in order to separate the strands. Serve with homemade alfredo sauce or any other topping of your choice.

Pasta Verde

  • Add 3 to 4 TBs. of blended cooked spinach to the dough before mixing




For Lasagna: After you have rolled the dough, let it rest for an additional 10 minutes. Then cut with a sharp knife to the desired shape and size.
