So what is gluten exactly? Gluten is a protein that is found in certain grains such as oats, rye, wheat and barley. It is therefore most commonly found in baked goods and breads. Some people - you might be one of them - have an allergy to this protein which causes them some minor - and sometimes major - digestive discomforts hence the reason they must adhere to a gluten free diet. There are some grains which do not contain gluten: rice, corn, buckwheat, millet, amaranth, quinoa and teff. The problem with getting rid of gluten is that this protein is the reason baked goods are light and chewy. Take the gluten out and it does affect the finished product. Gluten also acts as glue...so no gluten and your baked product wants to break apart. However, with some adjustments, if you must eat a gluten free diet you can still enjoy grain products made without the gluten. Don't believe me?
