Cinnamon Almond Cookies

1 1/2 cups butter, softened
1 cup sugar
3 eggs, separated
3 cups flour

topping:

1 cup sugar
2/3 cup finely chopped almonds
1 t. ground cinnamon

In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks. Gradually add flour and mix well.

Roll out in strips about 1/4 inch thick and cut dough into 2 inch pieces. (There is no need to separate the cookies. You can also use a cookie press for this, but it is faster and just as good to roll out or even use cookie cutters.)

In a small bowl, beat egg whites until stiff peaks form and brush over dough. Sprinkle sugar almond topping, then bake at 350 degrees F for 8-10 minutes or until edges are firm - but DO NOT brown. Cut pieces if necessary and move to wire racks to cool.

Note: The topping makes a lot - enough for at least 2 batches or more!!
