Chewy Oatmeal Cookie Recipe





This chewy oatmeal cookie recipe is on this site because my neighbor has been "pestering" me for the recipe.... So sweet - and wonderful - neighbor of mine here it is!

I guess I started an "oatmeal chocolate chip cookie addiction" when I started sending these oatmeal chocolate cookies next door. Afterall, they are the best neighbors ever - more like family really - and I do HAVE to spoil them.

On the flip side of this, I don't know what bargaining power I'll have now when I am out of sugar - or chocolate chips or whatever - as the "a dozen cookies for a 1/2 cup of sugar" may not work as well.

Nonetheless, this is the best chocolate chip cookie recipe I have so far and it only takes 45 minutes from start to finish. Yes, I did time it...last Saturday as a matter of fact as I was trying to whip up a batch under one hour...and I did!

This recipe is so fast and easy and this chewy oatmeal cookie recipe comes out perfect every time. My nine year old daughter and her best-friend even made a batch all on their own for an impromptu tea party.

Chewy Oatmeal Cookie Recipe





Ingredients for the Best Chocolate Chip Cookie Recipe

  • 1 cup of butter softened

  • 1 cup of light brown sugar

  • 2 eggs

  • 1/2 cup of white sugar

  • 2 tsp. of vanilla extract

  • 1 3/4 cups of all-purpose unbleached flour

  • 1 tsp baking soda

  • 1/2 tsp of salt

  • 3 cups of quick oats

  • 1 cup of semi-sweet chocolate chips

  • 1 cup of peanut butter chips

  • 1 cup of toffee morsels or white chocolate chips

  • 1 cup of walnut or pecan pieces - or a mix of both!









Directions for the Chewy Oatmeal Cookie Recipe

I use a stand mixer to make this recipe.

In the mixer bowl, put the butter, brown sugar, white sugar, vanilla extract and eggs. Blend until it is very creamy. The mixture will turn white and be thick but will also be light in texture.

At this point, add the flour, baking soda and oats. Mix again. It will form a coarse dough.

Add the chips and nuts then blend again.

Roll 1 inch balls with your hands and place them on an ungreased cookie sheet.

Heat the oven to 325 degrees and bake your cookies for about 12 minutes.

After removing the cookies from the oven, wait 3 to 5 minutes before placing them on a cooling rack - or on your plate.
