Cheesy Chicken Potato Soup

I wanted to make potato soup one night and all the recipes I found I was lacking one ingredient or another... so I decided to "make one up." It was husband and 3 year old approved...

So I thought I would share it...

2 T. butter
4 garlic cloves, minced
1 large onion, diced
1/2 t. each salt and pepper.
1/8 t. each dried parsley and thyme
2 medium Idaho potatoes
2 c. chicken broth
1 1/2 cups shredded chicken
1 c. cheese
1/2 c. heavy cream
dash of nutmeg (optional)

Put butter, garlic, onion and seasoning in pan and sautee until soft.

Add potatoes and chicken broth; cover and simmer until potatoes are tender.

Meanwhile, fully cook and shred chicken.

Puree potato mixture and add to chicken in a pot. Turn on the heat and add cheese.

Mix until melted through, turn off heat and add cream and nutmeg.

Serve immediately - perhaps with a slice of garlic bread!
