Buttermilk Oatmeal Pancakes





Buttermilk oatmeal pancakes are delicious and nutritious. This oatmeal pancake recipe is also a nice change from plain buttermilk pancakes.

Oatmeal has been touted as a health food and for good reasons, see for yourself:

  • Multiple studies show that eating oatmeal may help in lowering your cholesterol and reduce your risk of heart disease.

It is supposed to be the soluble fiber in oats that helps remove the "bad" cholesterol - LDH - while at the same time maintaining the good cholesterol - HDL.

The Food and Drug Administration - FDA - jumped on the bandwagon when in January of 1997, it announced that oatmeal could carry a label claiming it may reduce the risk of heart disease when combined with a low-fat diet.

  • The soluble fiber in oatmeal has another nifty effect: it absorbs a considerable amount of water which in turn significantly slows down your digestive process.

Big deal? Yes, because the result is that you feel full longer which is important for weight maintenance and weight loss.

  • Newer research suggests that eating oatmeal may also reduce your risks for type 2 diabetes.

For this reason, the American Diabetes Association recommends that people who suffer from diabetes eat oats as well as other whole grains. Again, it is the soluble fiber in oats we have to thank for this as it helps to control your blood glucose levels.

  • Other studies have discovered that a diet that includes oatmeal may help also reduce high blood pressure! Why? Yes you guessed it by now...soluble fiber.

  • Some research hints that oatmeal could protect you against certain forms of cancer.

Buttermilk Oatmeal Pancakes: Ingredients


  • 2 cups oats - either quick or regular

  • 3 eggs - beaten

  • 1/2 cup all- purpose flour - or pastry wheat flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract- optional

  • 1/2 teaspoon ground cinnamon - optional






Oatmeal Buttermilk Pancakes: Method

There are two methods to prepare the oats:

  • 1) In a large bowl, place the oats and the buttermilk. Let the oats soak in the buttermilk overnight.
    Note: You have to use this method if using regular oats.

  • 2) Warm the buttermilk in a pan, dump the oats in and let sit five minutes.

To your oat mixture, add the eggs, flour, baking powder, baking soda, salt, cinnamon, vanilla and oil. Blend until well combined.

Heat a pan - or a griddle - and oil it. Pour the pancake batter onto the pan to your desired size. When air bubbles start to form on the surface of your pancakes flip them over.

After about one minute flip them over and check for doneness. Your oatmeal buttermilk pancakes are done when golden brown. Serve while still warm with the syrup of your choice.
