This is a delicious breakfast hash brown casserole also known as an Amish breakfast casserole.

You will have such an easy time making it and it will get you rave reviews. The only drawback is that it is NOT fat free...some will say this is the reason why it tastes so good!

Amish Breakfast Recipe: Ingredients


  • 1 pound bacon - diced

  • 1 medium yellow onion - chopped - about 1 cup

  • 6 large eggs - beaten

  • 4 cups grated potatoes

  • 2 cups shredded cheddar cheese

  • 2 cups cottage cheese

  • 1 cup shredded Swiss cheese or Monterey Jack cheese






Breakfast Hash Brown Recipe: Method

In a pan, cook the bacon pieces. Drain the fat. Remove the bacon.

In the same pan, saute the onion.

In a large bowl, mix all the ingredients together.

Grease a 13 x 9 x 2 inches baking dish. Put the casserole mixture in the dish.

Bake uncovered for 35 to 40 minutes at 350 degrees. Let stand about 10 minutes before serving.

This will make about 12 servings.
